My mom taught me this recipe a few years ago and it is my go-to dessert for potlucks or when I’m taking a dessert to a party.
It is so yummy and I’ve heard of people using all different types of fruits instead of cherries. I was at a party a few months ago and they had done it with blueberries and it was SUPER good. It can be mixed together in about one minute and people eat it up every time. I also recommend eating it hot with vanilla ice cream on top!
2 cans of cherry pie filling
1 can of crushed pineapple
1 box of yellow cake mix
1 stick of butter or margarine
Spray a 9×13 pan with cookie spray. Pour the two cans of cherry pie filling and the one can of crushed pineapple in the pan. Mix them together in the pan and smooth them out to make one even layer. Sprinkle the yellow cake mix DRY on top of the fruit mixture until all of the fruit is evenly covered. You will use almost the entire box. Just make sure all of the fruit is covered well. Heat a stick of butter or margarine in the microwave or on the stove until melted completely. Pour the butter on top of the dry cake mix and try to cover as much of the mix as you can. If there are some dry spots when you are done that’s ok. Bake for 30-40 minutes or until the cake mix is bubbling and golden brown.
*For the ramekins: Mix the fruit and put in the bottom of each ramekin. Sprinkle the cake mix on top and pour butter on each top. The only difference is the baking time. These only bake for about 15 minutes. I think it’s a fun way to serve this cake.
