I have been making Chocolate Melting Cake for me and Dane alot lately…probably not the best thing to eat right before bed but I do anyways.  This is the best recipe for if you are craving something sweet and don’t really have much in the kitchen.   We went on a Carnival Cruise and this was my favorite thing so I found this great recipe in Woman’s Day mag that is exactly the same!  It is super fast and makes enough for you and your hubby.  Double it for the kids!

You will need:
4 Tbs. unsalted butter, plus more for the ramekins  (4 Tbs. butter is half a stick)
1 Tbs. flour, plus more for the ramekins
1/3 cup chocolate chips (it says bittersweet but I use milk chocolate, dark would be good too!)
1 large egg plus 1 large egg yolk
2 Tbs. granulated sugar

Heat oven to 450 degrees.  Butter two 6 oz. ramekins and dust with some flour.  I bought my ramekins from World Market for just a couple of dollars.  They come in all kinds of great colors and are nice to have!

Place the butter and chocolate in a bowl and melt in the microwave for short periods until they are melted.  Mix together.

Using an electric mixer, beat the egg, egg yolk, and sugar for one minute.  It will become a lighter color and a little thicker.

Add the chocolate mixture and flour and beat until smooth.

Divide the batter between the two ramekins.  Bake until the edges are set and the center jiggles, about 8 to 10 minutes.  Wait a few seconds and then run a knife around the edges.  Place your plate upside down on the ramekin and then flip it over.  Slowly lift the ramekin and let it drop carefully onto the plate.

Eat immediately!  Great with vanilla ice cream!
